Kyckling och pasta med italienska smaker

Det här, mina vänner, blev jag otroligt nöjd med. Gårdagens lunch gjord med bland soltorkade tomater och chilimarinerade oliver hela vägen från Italien, från mammas vänner.
 
3 kycklingfiléer
2 gullökar
2 vitlöksklyftor
10 soltorkade tomater
10 oliver, urkärnade, ej fyllda, gärna chilimarinerade
6 små champinjoner
100 g (en halv stor påse) färsk bladspenat
75 g (1/2 paket) fetaost
2 dl grädde
Salt, vitpeppar, chilipulver, paprikapulver
 
Pasta eller ris eller grönsaker. Vi hade pasta till!

How to:
Skär de tinade kycklingfiléerna i stora strimlor/bitar. Lägg åt sidan.
Hacka löken och skiva champinjonerna.
Kärna ur oliverna om de inte är det från början.
Strimla de soltorkade tomaterna.
 
Smält en stor klick smör i en stor stekpanna och rör ner champinjonerna och löken. När champinjonerna vattnats ur och krympt samt att löken är glansig kan du tillsätta kycklingen. Krossa i vitlöken och krydda med salt, peppar och paprikapulver. Om du inte har starkt marinerade oliver kan du även pudra över lite chilipulver efter eget tycke. Rör runt och stek tills kycklingen fått färg.
Tillsätt sedan oliverna, de soltorkade tomaterna och grädden.
Sänk värmen så att grädden puttrar.
Smaka av såsen efter en stund och krydda efter smak.
Rör sedan ner bladspenaten.
 
Koka upp ris elller pasta alternativt förbered dina grönsaker.
 
Lägg i tärnad fetaost mot slutet och servera alltsammans med dina tillbehör!

Portabello chicken in a sambal oelek creme fraiche sauce

 
You know when you improvise and all the tastes just seem to connect and become one great dish? That happened here.
 
Ingredients:
3 chicken breasts
1 yellow onion
1 large portabello mushroom
2,5 dl creme fraiché
1 spoon sambal oelek
1 spoon tomato puré
 
Salt, black pepper and white pepper
Butter to fry and a little bit of oil to fry in
 
Potatoes, rice, mash or pasta.
Salad - I used mixed leaves, cucumber, tomatoes and red onion.
 
How to:
Chop the onion finely and mushrooms into pieces like the above.
Melt butter in a pan on medium heat and toss the onion and mushroom in and make sure they're covered in butter. If it looks a bit dry, at a little olive oil.
When the onion is soft and the mushroom has a nice golden surface, remove from the pan.
Cut the chicken into pieces of your liking.
Season with salt and pepper before you fry them.
When the chicken is browned on both sides, add the mushroom and onion again.
Also turn the creme fraiche into the pan and turn down to simmer.
Season with white pepper and add the tomato puré and sambal oelek.
TASTE!
 
Serve with spuds, rice, mash or pasta and a nice salad on the side. Or just the salad.

Flygande Jakob // Flying Jacob

 
Hej vänner! Hur mår ni? Hade en fin helg med hundra saker att göra och avslutade den i soffan med pojkvännen. Vi åt Flygande Jakob som jag aldrig testat innan - HUR HAR JAG MISSAST DETTA?! Så fruktansvärt gott och världens enklaste recept.
 
Ingredienser:
1 grillad kyckling
3,5 dl grädde
2,5 dl sweet chilisås
1 paket bacon ~140g.
1-2 bananer - valfritt
~ 2 dl nötter - jag använde cashewnötter då jag inte kan äta jordnötterna som brukar användas
Salt och svartpeppar
 
Ris
Sallad - babyspenat, ruccola, gurka, avocado, tomater, paprika, osv.
 
How to:
Sätt ugnen på 225°C.
Rensa kycklingen (jag slapp då pojkvännen är mästare på detta!)
Klipp baconen i 1cm långa bitar och stek knapriga, låt rinna av på papper.
Skiva bananerna.
Blanda grädden med sweet chilisåsen och krydda med salt och peppar.
Fördela kycklingen i en ugnsform så att det täcker botten.
Lägg baconen ovanpå och sedan bananer efter smak (valfritt).
Häll över gräddblandningen.
Garnera med nötterna.
Ställ in i ugnen i 10-15 minuter - Håll koll! Mina nötter blev lite mörka på slutet!
 
Servera med ris och sallad.

Hi friends, how are you? I've had a lovely weekend with roughly a hundred things to do and I ended it in the sfa with my boyfriend. We ate my version of Flying Jacob (a first-timer) - HOW HAVE I MISSED OUT ON THIS?! It's so blooming good and the easiest recipe ever.
 
 
Ingredients:
1 grilled chicken
3,5 dl cream
2,5 dl sweet chili sauce
2 bananas - optional!
1 packet of bacon ~140g
~2dl nuts, I used cashewnuts but most recipes state peanuts
Salt and black pepper
 
Rice
Salad - baby spinach, cucumber, tomatoes, avocado, paprika, etc.
 
How to:
Put your oven on 225°C.
Strip off the chicken meat (I got away with this as my boyfriend is the master of de-meating grilled chicken!)
Cut your bacon into 1cm long pieces and fry crispy, let drip off on paper.
Slice your bananas if you are using them.
Mix the cream with the sweet chili sauce and season with salt and pepper.
Cover the bottom of a casserole dish with the chicken.
Sprinkle the bacon on top and then layer your banana (if using) over that.
Pour over the cream mixture.
Cover the lot with your nuts.
Cook in the oven for 10-15 minutes - keep an eye on it, my nuts went a bit dark towards the end!
 
Serve with rice and a salad.

Red curry chicken // Kyckling i röd curry

'Morning! I can feel that today is going to be a good day. It might be because of the sun outside or from the coffee earlier that is making my head spin, haha. Anyway. I made the above yesterday for breakfast.. or lunch, depends what time you got up. It was 4pm when I got up after work. As usual, I went for easy when it came to making this. Something else - I've really taken a liking to the other parts of the chicken besides the breasts as the bone and skin when crispy on the other parts make everything tastier.
 
Ingredients:
3 chicken legs - defrosted!
3 chicken wings - defrosted!
3 tblsp red curry paste
A few lugs of olive oil
Salt, paprika powder and black pepper
4 cloves of garlic - whole!
 
The rice and peas dish I ate with this will be given a seperate post. I just need to master the recipe properly before sharing it with you. I had my first time attempt in bags in the freezer that I just warmed up.
 
Sauce:
1,5 dl creme fraiché
0,5 dl sweet chili sauce
2 tblsp sambal oelek
 
How to:
Put your oven on 220°C.
Put your chicken in a bowl and season well with salt, paprika powder and black pepper.
Put in your olive oil and curry paste.
Use your hand and really rub the seasoning into the chicken.
Let rest for 5 minutes.
Wash your hands well in soap and hot water.
Heat a medium pan on almost full whack.
Fry your chicken for a minute on both sides.
Put your chicken SKIN-SIDE UP FOR CRISPY SKIN in a casserole dish and throw in your garlic cloves too.
Cook in the oven for 25 minutes.
 
Mix all of your sauce ingredients in a bowl and taste for possible extras seasoning.
 
Serve immediatley with rice and the sauce.

'Morrn! Idag är känns som en bra dag. Det kan bero på solen utanför fönstret eller kaffe tidigare som får mitt huvud att snurra. Hur som helst. Jag gjorde maten ovan igår till frukost.. eller lunch, det beror på när man går upp. Jag vaknade vid fyra efter jobbet. Som vanligt körde jag på enkel mat. Jag har verkligen fastnat för de andra delarna av kyckling än filéerna då benen och det knapriga skinnet vid tillagning ger så mycket mer smak! 
Ingredienser:
3 kyckling lår - tinade!
3 kycklingvingar - tinade!
3 msk röd currypasta
Några stora skvättar olivolja
Salt, paprikapulver och svartpeppar
4vitlöksklyftor - hela!
 

Riset med kidneybönor kommer komma upp i ett eget inlägg någon gång. Jag måste bara uppnå rätt resultat innan jag delar receptet med er. Jag hade min första provomgång i frysen som jag bara värmde upp.
 
Sås:
1,5 dl creme fraiché
0,5 dl sweet chili sauce
2 msk sambal oelek
 
How to:
Sätt ugnen på 200°C.
Lägg kycklingen i en bunke och krydda väl med salt, paprikapulver och svartpeppar.
Häll över oljan och currypastan.
Använd händer för att gnugga in smakerna ordentligt i kycklingen.
Låt vila i 5 minuter.
Tvättat händerna i tvål och varmt vatten.
Värm en stekpanna på hög värme.
Stek kycklingen i en minut på båda sidor.
Lägg kycklingen i en ugnssäker form MED SKINNSIDAN UPP FÖR KRISPIGT SKINN och lägg i vitlöksklyftorna med.
Ställ in i gunen i 25 minuter.
 
Blanda ihop alla ingredienserna till såsen och smaka av.
 
Servera direkt med ris och såsen.

Crispy chicken legs // Krispiga kycklinglår


HI! I am over the moon right now. Last time I tried cooking chicken legs it was a disaster. Today it was a success. I believe in making mistakes in order to succeed next time. This is so easy (it seems to be a trendy word in this blog, haha) and who wants to say no to non-complicated food?

Ingredients 4 portions:
4 chicken legs - defrosted!
4 cloves of garlic
Salt, black pepper and dried rosemary
Lemon juice
Oil to fry in
 
How to:
Heat your oven to 220°C.
Put your chicken in a bowl and season with salt, black pepper and dried rosemary.
Pour in a few lugs of oil too.
Flip, turn and jiggle the pieces of chicken to make sure they are covered in all the flavour.
Heat a pan on high heat.
Fry the chicken for 1 minute on both sides and then put in a oven proof dish.
Peel the garlic and put in the dish too - whole.
Squeeze about half a lemon's worth of juice over the chicken.
Cook in the oven for approximately 25 minutes.
The juices will be clear and not pink when the chicken is done.
 
Serve with something like a green salad and guacamole!

Guacamole:
2 avocado
1 large clove of garlic
4 cherry tomatoes
1/2 red onion 
Lemon juice
Herb salt
Salad seasoning
 
Mash the avocado.
Crush the garlic into it.
Quarter the tomatoes and put in.
Chop the onion finely and add to the guacamole-to-be.
Add a bit of each spice and a bit of lemon juice - taste as you go!
 
Voilá!

HEJ! Jag är så himla glad just nu. Förra gången jag lagade kycklinglår blev resultatet en katastrof. Idag blev det en succé. Jag tror verkligen på att det är bra att råka göra misstag för att sedan lyckas nästa gång man prövar. Det här är ett så enkelt recept (en trend i den här bloggen, haha) och vem vill säga nej till okomplicerad mat?
 
Ingredienser 4 portioner:
4 kycklinglår - tinade!
4 vitlöksklyftor
Salt, svartpeppar och torkad rosmarin
Citronsaft
Olja att steka i
 
How to:
Sätt ugnen på 220°C.
Lägg dina kycklinglår i en bunke och krydda med salt, svartpeppar och torkad rosmarin.
Häll över ett par matskedar olja också.
Vrid, vänd och flippa kycklingen för att täcka dem i hela marinaden.
Värm en stekpanna på hög värme.
Stek kycklingen i 1 minut på båda sidor och flytta sedan till en ugnsform.
Skala vitlöken och lägg i formen också.
Pressa ca en halv citron över kycklingen.
Ställ in i ugnen i ca 25 minuter.
Köttsafterna är klara och inte rosa när kycklingen är klar.
 
Servera med en grönsallad och guacamole!
 
Guacamole:
2 avocado
1 stor vitlöksklyfta
4 körsbärstomater
1/2 rödlök
Citronsaft
Örtsalt
Salladskrydda
 
Mosa avocadon.
Pressa i vitklöken.
Tärna tomamterna och lägg i.
Hacka löken fint ochSmaka av med kryddorna och citronsaften.
 
Voilá!

Kyckling i röd curry med matvete

 
Hallå där! Jag kom på en sak medan jag laddade upp det här bilderna, att jag tänkte ungefär 0,1 gång innan jag valde matvete som ett smart alternativ till all annan pasta och så. Visst att det är fiberrikare, men jag TÅL JU INTE VETE. Smart tjej här! Men det var ju himlans gott i alla fall. Har vårfixat lite i lägenheten och under ett gäng andra grejer hittade jag min bytta med röd currypasta och blev genast sugen på det.
 
Ingredienser (2 port):
1-2 kycklingfiléer
2 nävar frysta haricoverts
1 gul lök
2 tsk röd currypasta - beror helt på hur starkt du vill ha det, börja gärna med hälften och smaka av med mer.
1/2 burk kokosmjölk
0,5 dl vatten
Salt och basilika
 
Matvete - följ anvisningarna på förpackningen.
 
How to:
Hacka löken och strimla kycklingen.
Stek ihop i olja och krydda med salt och basilika.
Blanda ut currypastan med vattnet och häll i stekpannan.
Häll över kokosmjölken och lägg i haricovertsen.
När bönorna är genomvarma, smaka av ytterligare.
 
Servera varmt med matvetet!

Fried chicken with leek and asparagus

 
Hello there! I've been to the gym this evening and after cleaning my entire flat I was starving. The best things about eating a salad or other side dishes is that it takes less time than your usual carbohydrates like potatoes and rice. It's easier on the body before bed too. 
 
Ingredients:
As many chicken fillets as you want - approximately 1 per person.
1/2 a leek
~ 2 tblsp balsamico
Salt and a mixture of pepper spices
 
A crunchy salad with components such as cucumber, red onion, feta cheese, avocado, tomatoes and olives.

Asparagus, wrapped in bacon if you like bacon.
 
How to:
Dice your chicken and fry in oil and a knob of butter.
Season with salt and the mix of pepper spices.
Slice your leek rather thinly.
Add the balsamico to the chicken and toss the pan to mix it all.
Add your leek when your chicken is in the final stage of frying.
 
Fry your asparagus in a large knob of butter.
Season with salt.
 
Serve with a crisp salad with a drizzle of balsamico.

"Kyckling paprika" - en familjerätt

Hej snyggingar! Tiden rann iväg igår och jag fick slänga ihop en snabb coleslaw istället för brödet då jag och pojkvännen skulle äta annat senare på kvällen. Provsmakade min kycklinggryta, eller kyckling paprika som vi kallar den hemma, lite snabbt och den var ljuvlig som lunch idag! Sugna på receptet?

Ingredienser:
1 hel kyckling - 1-1,5kg
2 stora gula lökar
2-3 gröna paprikor
2 burkar hela tomater
3 dl gräddfil
Paprikapulver, salt, svartpeppar
Smör att steka i
3 teskedar Maizena majsmjöl eller vetemjöl

How to:
Salta, peppra och krydda kycklingen rikligt med paprikapulver och gnugga in ordentligt.


Tvätta händerna i varmt vatten och med tvål för att inte föra över bakterierna till grönsakerna - tänk på att alltid använda olika knivar och skärbrädor eller tvätta noggrant emellan användning av rå kyckling och andra råvaror.

Hacka löken grovt.
Rensa och skär din paprika i bitar.

Hetta upp en kastrull på hög värme och smält margarin.
Bryn hela kyckligen runt om innan du kryddar mer.
Släng i löken och paprikan och rör runt.
Tillsätt även dina burktomater och fyll en burk till 3/4 med vatten och häll i också.
Låt puttra i 45 minuter med lock. Vänd kyckligen någon gång under tiden.



När det 45 minuterna passerat tar du ut kyckligen och stänger av plattan.
Sätt på ditt ris.
Rensa din kyckling och lägg köttet i en skål - var försiktig då kyckligen är väldigt varm!


Blanda ner 3 teskedar maizena i din gräddfil.
Sätt på plattan och rör ner gräddfilen i kastrullen.
Låt koka upp i 2 minuter.
Smaka av och krydda mer om det behövs!
Lägg i kyckligen det allra sista för att värmas igenom.


Servera direkt med ris och gärna en god grönsallad!

Chicken challenge

Ahoy there! I've just come home from a friend whom I met in Australia when I was there. A new work week is ahead of me and I wanted to get some of the lunch boxes done today. I bought two whole fresh chickens at the supermarket earlier and am cooking one now. I'm using one of my mum's recipes and it's always a challenge living up to the original. Whilst it's simmering away I'm going to whip together my favourite youghurt bread for my boyfriend who, I'm happy to say, loves it! Peek in later and there will be pictures and the recipe.

Vardagslyx

 
Enkelt att bli glad av mat. Extra roligt när man har någon att bjuda. Kyckling med hasselbackspotatis och trattkantarellsås.
 
Ingredienser:
6 potatisar
2 kycklingfiléer
3 scharlottenlökar
1 näve torkade trattkantareller - Blötlägg kantarellerna i några timmar om du har tid för att få fram smaken mer!
2,5 dl grädde
Salt, vitpeppar och pepparmix
 
Smör till potatisen
 
How to:
Sätt ugnen på 200°C.
Skala dina potatisar och halvera dem. Skär nästan hela vägen igenom tvärs över ytan i tunna skivor.
Lägg på en plåt och salta med flingsalt och lägg på klickar med smör på snittytan.
Skicka in i ugnen tills de är genommjuka och gyllenbrunt knapriga på ytan.
 
Hacka scharlottenlöken fint och stek i olja.
Skär kycklingen till önskad storlek och stek med löken.
Salta och krydda med pepparmixen.
När kyckligen fått en fin ytan, häll i de avrunna kantarellerna och grädden.
Krydda mer mer salt och vitpeppar.
Smaka av!
 
Servera direkt, gärna med en god sallad till!

Chicken enchilladas

 
My food-crazy friend Nana came round this Wednesday and we made some kick-ass chicken enchilladas to eat to the football on TV (yes, when Zlatan scored 4 goals for Sweden against England!). We're alike in the kitchen, when trying something new the amount of ingredients used can be determined when it's all finished. Improvisation is great!
 
Ingredients (6 enchilladas):
2 fillets of chicken
1 yellow onion
1 red paprika
4 champignons (?) (champinjoner)
~4 dl creme fraiché
1 red chili pepper
3-4 tblsp yellow curry powder - season with half first and add the rest successfully along the way and taste!
Cayennepepper, salt and pepper.
6 tortilla breads
 
Cheese for garnish
 
How to:
Set your oven on 200°C.
Chop your onion finely and fry in oil with your diced paprika and chopped champignons.
Season with salt and pepper.
Cut your chicken into small-ish pieces and add to the pan.
Add your curry powder and your finely chopped chili.
Add your creme fraiché and give the lot a taste.
Season with cayenne pepper and more curry powder if needed.
 
Place a few spoons of the chicken mixture on a tortilla bread and roll together.
Place in an oven proof dish and repeat with the rest.
Sprinkle cheese over the enchilladas and bake in the oven until the cheese turns golden brown.
 
Serve with jalapeños, avocado, tomatoes, cucumber and salad.

Red thai chicken curry

 
Hello peeps! I've been so busy but yesterday I had time to try one of my favourite recipes from home. That's one of my favourite things about cooking, learning how to make my favourite dishes my mum and family have always made. This is a simple recipe that tastes amazing and is nice to spice up any evning with. Try it out!
 
Ingredients:
2-4 chicken breasts
1 tin of coconut milk
1 yellow onion
1 tbsp Ghee or oil (Ghee is clarified butter)
1 stick lemon grass
2-3 fresh lime leaves
2 tbsp fish sauce
1 tbsp palm sugar (syrup will work too)
1 tbsp red curry paste
1 tsp basil
1 tin baby corn
 
How to:
Step 1:
Dice chicken and fry in a medium sized pan with the lemon grass and a little bit of oil.
Open the coconut milk and skim off the top layer of thick cream as shown on the picture. Save both!
Fill up the tin with water till the top and add to the chicken when it has been browned all over.
Cook gently for 10 minutes and then take off the hob.
 
Step 2:
Finely chop your onion and at o a wok with the tablespoon of Ghee or oil. Fry soft but not brown.
Add the curry paste, palm sugar and fish sauce and fry until all mixed together.
Add the thick cream and make sure that it DOESN'T boil because it will seperate.
Stil until evenly mixed.
Add the mixture to step 1 and put on the heat again. Cook for a further 5-10 minutes.
Add the basil and baby corn and cook for another 5 minutes.
 
Serve straight away with rice and/or noodles.

Bisto gravy chicken with mash, veg and a best friend

 
Yesterday my dear friend Nana came round for lunch and a catchup as I'd been away all weekend. I made something easy and English for us. Chicken, mash and gravy is always a winning concept.
 
Ingredients:
2 chicken fillets
2 small yellow onions OR 1 large
Salt and pepper
1 chicken OXXO cube or other cube of chicken stock (kycklingbuljong)
2 tblsp Bisto gravy powder
2 dl boiled water
3 tblsp cold water mixed with 1,5 tblsp Maizena
 
6 potatoes
1 large knob of butter
0,5-1 dl milk
Salt
 
Vegetables such as carrots, cabbage, broccoli and brussel sprouts.
 
How to:
Peel and half your potatoes and put on stove to boil in salted water.
Peel your carrots and slice your cabbage and put in your steamer for approximately 30 minutes - put on to time with your potatoes.
 
Chop your onion finely and fry with your chicken in a few lugs of oil.
Season with salt and pepper and OXXO.
Add your boiled water to the pan when your chicken is golden brown.
Stir frequently whilst adding your Bisto to avoid clumps.
Bring to the boil and add your Maizena&water mixture whilst stirring.
Turn down to simmer until your potatoes and vegetables are ready.
 
When making the mash, add the butter and milk and season with salt.
You may want more milk or butter to change the concistancy.
 
Serve straight away.

Kycklingsallad



Så enkelt och så gott till kvällsmat häromdagen.Stekte kycklingen i lite olja och kryddade med salt, peppermix och lite paprikapulver. I salladen hade jag ruccola, bladspenat, fetaost, gurka, tomat, rödlök, avocado, jalapeño och oliver. Pressade lite citronsaft över det hela och avslutade med att ringla lite balsamico över. Så.jävla.gott.

Chicken - backpacker style

That feta cheese in my sauce does not take a good picture..
 

HEY GUYS! I was so hungry earlier that I thought I was going to collapse. I remembered a "recipe" Julia and I used when we went backpacking in Australia last year. Quick and easy and all I did was add chicken and a few other fun things from the fridge.
 
You need:
3 fillets of chicken
125g feta cheese
1 yellow onion
150g bacon
2,5dl creme fraiché
Mushrooms
Black pepper and paprika powder
 
Fresh pasta
Rocket
Tomatoes
 
How to:
Chop your onion finely. Fry in oil in a pan on medium heat.
Chop your bacon and mushrooms roughly and add to your pan. Season with black pepper.
When the bacon has a good colour, pour into a seperate bowl.
 
Fry your chicken in pieces chopped to the size you want. Season with paprika powder.
Bring water to the boil for your pasta when your chicken is sizzling in the pan.
When your chicken is cooked through, add your bacon mixture to the pan again.
Start boiling your pasta at this point (the fresh pasta I used only takes 2,5 minutes).
Crumble your feta cheese over your chicken, add your creme fraiché and stir - turn the heat down.
 
Serve straight away when the pasta is done!
 

Chicken-pepper-mouldy cheese combination

I love it when I look in my fridge, see how ingredients could possibly work together, try it and the result is a success.
Ingredients (2 portions):
2 fillets of chicken
1 yellow onion
1 red pepper
A few slices of mouldy cheese, or any other strong cheese you may like.
Salt, black pepper and pepper powder (paprikapulver)
The juice from 1/2 a lemon.
Fresh pasta - we buy fresh pasta from our local ICA shop. This one has a taste of spinach and is really tasty

How to:
Chop your onion finely.
De-seed your pepper and slice it quite thinly.
Cut your chicken into chunks or slices.
Fry all three together in some butter.
Season with salt, black pepper and pepper powder after your own liking.
Whilst your chicken is getting fried, get your water boiling for your pasta.
Follow the instructions on the packet.

Put pasta on a plate or in a bowl, drizzle a little olive oil and a good squeeze of lemon over it.
Add your chicken and pepper.
Crumble som mouldy cheese on top and give it all another squeeze of lemon.
Serve immediatley!

Chicken burgers

I'm a big fan of burgers as you might have noticed. Tonight I decided I'd give chicken burgers a go. Nothing advanced and I'm sorry to say that you won't be getting any fancy pictures as I'm not eating them tonight. They're for work tomorrow. I'll make sure I take a picture with my phone and upload for you. If they taste good I know there will be a re-run, haha. Goodnight for now!

Quick-and-easy bacon wrapped chicken with chips

I've been busy today (like so many of the past days with no update) and I noticed the defrosted chicken very late. I seasoned the fillets in lemon and black pepper, wrapped them in bacon and fried them with a chopped yellow onion in butter. Served with my favourite sides - chips and HP sauce, salad and a lovely guacamole. I've taken up on using tomato in my guacamole, I'm not sure what it does, but it makes a nice change!

Basil chicken with mozzarella and tomato

I'm in a bit of a rush and really need to eat. There was chicken in the fridge ready to be used and a bit of mozzarella I bought the other day. No recipe is needed really. All I did was slice the tomato, mozzarella, a small red onion and a few jalapeños and made a salad of it. I fried my chicken in salt, black pepper and basil and served it straight away with a drizzle of balsamic vinegar. Yum!
