Chicken fried rice

 
And here we have it - my first attempt at fried rice... it was lovely.
 
My boyfriend, or Daniel as some of you might know him as, suggested this the other day so I thought I'd give it a go. With my mind impersonating a goldfish I forgot some of the essential greens to go in, but I did get a whole fresh chicken that I cooked in the oven first. Uh-huh. I did. 
 
Ingredients:
 4 portions of rice - boiled and cold
1 yellow onion
1 red onion
Spring onion, leek and peas if you wish.
1 grilled chicken - either buy one fresh and grill it yourself or buy one ready from the shop
3 eggs
Fish sauce or oyster sauce
Hoisin sauce
Soy sauce
Salt and pepper
Oil to fry in
 
How to:
Beat your eggs in a bowl with a splash of oyster sauce.
Heat up some oil in a wok on medium heat and pour in half of the egg mixture.
Turn when the egg has set.
Remove the 'egg pancake' and do the same with the rest of the mixture.
Set aside and let cool.
 
Chop your onion and greens (not peas) and fry until coloured on high heat in some oil.
Remove from pan and set aside.
 
Turn the heat down to medium again and stir fry your rice in oil.
Cut your chicken into pieces and add to the rice.
Add your oyster sauce, hoisin sauce, soy sauce, salt and pepper a little at a time and taste as you go.
Add your greens too and also put in your peas.
 
Cut your egg into pieces and add to the wok.
Stir fry until the rice has reached the colour of your liking.
 
Serve immediatley!
