The pea soup that wasn't as edible as it looks

 
I thought I did everything right and it was cooking away but when I tried the first spoon, the peas were still too hard. I'd done step 1 wrong. When using fresh peas you have to let them soak over night and I'd just not soaked them in enough water. Otherwise the meat was perfect and the other flavours were exactly what they should be. But as I've said before, it's okay to make mistakes. Next time this soup will be UH-MAZ-ING!

Potato and leek soup // Potatis -och purjolökssoppa

Klockan är 09.45 och jag hade ingenting att göra. Matlagning var naturligtvis svaret. Potatis -och purjolökssoppa räddar de där råvarorna som är på väg ut men fortfarande är användabara. Receptet på svenska finner du här!

It's 9.45 AM and I didn't have anything to do. Cooking was the answer if course. Potato and leek soup is the savior when these ingredients are on their way out. It's so tasty!

Ingredients: 
5-6 potatoes
1 leek
1 stock cube
3,5 dl cream
6 dl water
Salt, white pepper

Bacon for garnish

How to:
Peel off the out layer of the leek, slit it to the center and wash thouroughly under the tap.
Slice thinly.
Peel the potatoes and slice them thinly too.
Put both in a saucepan with the 6 dl of water and stock cube, bring to a boil.
When the stock cube has disolved, add the cream and boil for another 6 minutes.
Use any kind of mixer to mix the soup smooth.
Pour back into the saucepan and re-heat on the lowest heat.
Season with salt and white pepper - taste as you go!

Fry bacon to a crisp and serve with the soup.

Asparagus soup // Sparrissoppa

 
Good morning people! Had a good weekend? I sure have. Yesterday had a perfect finish to it with this recipe for asparagus soup and bread baking. I used a recipe from one of Sweden's most famous chefs - Per Moberg. I was given his newest cookbook for Christmas from my little sister. It's very easy to cook and it doesn't take hours and hours to achieve perfection.
 
Ingredients 4 portions:
500g white asparagus
3-4 spring onions
8 dl vegetable or chicken stock
2 tblsp butter
1 dl dry white wine
3 dl full fat cream
Juice from 1/2 lemon
Salt and freshly ground pepper
 
Flat leaf parsley to garnish
 
How to:
Break off the ends of the asparagus - approximately 3 cm.
Peel them with a potato peeler, start 3 cm from the top.
Boil the peel for 5 minutes in the stock. Throw the peel away and set the stock aside.
 
Cut off the asparagus buds and put in a seperate saucepan.
Cut the asparagus stalks into 1 cm pieces. Chop your spring onions (the white part) finely and fry together with the asparagus pieces in butter.
Add the wine, cream and stock.
Bring to the boil whilst stiring.
Turn down to simmer for 10-15 minutes.
Boil the asparagus buds in lightly salted water for 3-5 minutes.
Blend the soup until smooth and season with salt, pepper and lemon juice after your own liking.
Place the asparagus buds in your bowls and pour the soup over straight away.
 
Serve the soup with the asparagus buds and garnish with the parsley.

Godmorgon vänner! Haft en bra helg? Det har verkligen jag. Den avslutades perfekt igår med det här receptet på sparrissoppa, samt brödbak. Jag använde Per Mobergs recept från hans nya bok om husmanskost som jag fick av lillasyster i julklapp. Det är superlätt och det tar inte fem timmar att uppnå perfektion.
 
Ingredienser 4 portioner:
500g vit sparris
3-4 knipplökar/vårlökar
8 dl höns -eller grönsaksbuljong
3 dl vispgrädde
1/2 pressad citron
1 dl torrt vitt vin
1 msk smör
Salt och nymald peppar
 
Persilja till garnering
 
How to:
Bryt av ändarna på sparrisen, ca 3 cm.
Skala sedan sparrisen, börja 3 cm från knopparna.
Koka skalen i buljongen i 5 minuter.
Sila av skalen och spara buljongen.
Skär av knopparna och lägg i en egen kastrull.
Skär stjälkarna i bitar á 1 cm.
Hacka löken fint.
Fräsk sparrisbitarna och löken i smöret.
Tillsätt sedan vin, grädde och buljongen du sparat.
Koka upp under omrörning och låt sedan sjuda i 10-15 minuter.
Mixa soppan slät och smaka av med salt, peppar och citronsaft.
Koka sparrisknopparna de sista du gör - i lättsaltat vatten i 3-5 minuter.
 
Servera soppan med de kokta knopparna.

Cowboysoppa // Cowboy soup

 
Ber om ursäkt för den dåliga bildkvaliteten men senkvällsljuset ger inga bra förutsättningar. Slängde ihop en cowboysoppa och blev riktigt nöjd. Recept?
 
Ingredienser:
~500g nötfärs
1 gul lök
2-3 vitlöksklyftor
2 köttbuljongstärningar
1 morot
2 potatisar
1,5 dl grädde - kan uteslutas!
0,7 l vatten
1 burk vita bönor
2-3 msk tomatpuré
2 msk balsamvinäger
Jag använde mig av en skalad och skalad tomat, annars fungerar krossade alt. passerade tomater.
Salt, svartpeppar, paprikapulver, oregano och cayennepeppar.
 
Även paprika är gott i men jag hade ingen hemma tyvärr!
 
How to:
Hacka löken och stek tillsammans med köttfärsen i en kastrull.
Krossa vitlöken i kastrullen.
Skala potatisen och moroten och skär i bitar.
När köttfärsen är stekt, häll i vattnet, lägg i buljongtärningarna, tomat-ingredienserna, moroten och potatisen.
Låt puttra tills buljongtärningarna lösts upp.
Häll i grädden och krydda med dina kryddor.
När potatisen mjuknat kan du hälla i bönorna (med tomatsåsen) och låta allt blandas ihop i ytterligare fem minuter.
 
Servera med ett gott bröd och en klick creme fraiché eller uppvispad kvarg!
 
In English:
 
Ingredients:
~500g beef mince
1 yellow onion
2-3 cloves of garlic
2 meat stock cubes
1 carrot
2 potatoes
1,5 dl cream - Optional!
0,7 l water
1 tin of baked beans
2-3 msk tomato puré
2 tblsp balsamico vinegar
I peeled and chopped a tomato, otherwise crushed tomatoes will work too.
Salt, black pepper, paprika powder, oregano och cayenne pepper.
 
Paprika also tastes good in this but I didn't have any at home!
 
How to:
Chop the onion and fry together with the mince in a saucepan.
Crush your garlic into the mince.
Peel the potatoes and carrot and chop into pieces.
When the mince is browned, pour on the water, add the stock cubes, the tomato ingredients, carrot and potatoes.
Let simmer until the stock cubes have disolved.
Add the cream and season with your spices.
When the potatoes are soft, add your beans (with the tomato sauce) and simmer for another five minutes.
 
Serve with a few slices of nice bread and a dollop of creme fraiché or whipped quark.

Fish soup from the freezer

 
Hiya! As we all know life catches up with us sometimes and we just don't really have time to cook. Some people always turn to fastfood and solve it that way, I try to always have some extra in the freezer. Today fish soup is served in my flat, I just heated it up on the stove whilst washing up and pottering around the kitchen. I'm enjoying it to an epside of Jamie Oliver's American food trip. Potato and leek soup

 
I guess I've made it quite clear that I'm fond of soups. Here is yet another favourite in my books but it's the first time I've made my own. It's funny how I feel like I've cooked loads living with my mum and sister, but whilst living by myself I am trying something new nearly every day!
 
Ingredients (4 portions):
5-6 potatoes
1 leek
6 dl water
3,5 dl cream
Salt
White pepper
1 chicken or vegetable stock cube
 
Bacon for garnish
 
How to:
Peel and slice your potatoes finely. Slice your leek finely too.
Boil the above with the water and stock cube until soft.
Add your cream and boil for another 6 minutes.
Use a hand mixer, food processer or smoothie mixer to mix your soup smooth.
Pour back into your saucepan and season with salt and white pepper after your own liking.
Let stand on the lowest heat to heat through.
 
Fry your bacon finely chopped until extra crispy and spinkle on your soup when served.
I ate a few slices of corn bread with cheese with this and had a nice touch.

Grönsakssoppa

Jag ber om ursäkt för ännu en värdelös bild. Det är svårt med kökslampan...
 
På hösten älskar jag mys extra mycket. Tända ljus, te, en soffa och någon god soppa och helst några skivor nybakt bröd med ost på. Det tråkiga är ju att jag egentligen inte tål bröd då jag är allergisk mot alla sädesslag förutom havre. Hur som helst har jag haft en enkel grönsakssoppa i huvudet hela veckan men har inte riktigt haft tiden. Idag tog jag tag i det mot alla odds.
 
Ingredienser:
1-1,5l vatten
8 skivor fläsk (eller något annan salt köttbit du har till övers)
4 stora potatisar
4 stora morötter
1 purjolök
Även kolrot fungerar bra här, dock hade jag ingen.
1 grönsaksbuljongtärning
1 köttbuljongtärning
Salt och svartpeppar
 
Hur du gör:
Det som är tidskrävande är första etappen - koka upp ditt kött i vattnet med köttbuljongtärningen och låt sedan puttra i 2-3 timmar.
Ta sedan ur köttet och ha i dina tärnade och skivade grönsaker.
Lägg i din grönsaksbuljongtärning och låt den lösas upp.
Smaka av och krydda med salt och peppar.
Låt puttra i ca 40 minuter.
Lägg i köttet igen och låt det värmas igenom.
 
Servera med något grovt bröd och ost, och njut av höstmyset i en extra stor stickad tröja i soffan.

Fish soup Sunday dinner



I invited mum and my little sister round last Sunday for lunch. My dear friend Nana gave me a recipe for a fish soup last autumn and it's become a favourite. Together with the youghurt bread I've baked before it turned out quite a feast.
 
Ingredients for le soup:
1 leek
4-5 carrots
8dl water
2 cubes of fish stock
1 tub of Creme Bonjour cheese (Garlic)
0,5-1dl creme
5-7 pieces of cod (Alaska pollock pieces work great)
4dl shrimps (peeled)
Lemon pepper and cayenne pepper
 
How to:
Chop your leek finely. Peel your carrots and grate them roughly. Put in a saucepan with the water and let boil for 25 minutes.
Add the fish stock cubes and the fish after 25 minuter and boil for another 10 minutes.
Add your Creme Bonjour and creme after your own liking and turn down heat to simmer.
Season with lemon pepper and cayenne pepper, taste!
Add your shrimps right at the end to warm through.
Serve straight away with a nice full-grain bread and cheese.
